Because it has a long shelf-life and is convenient. Correct me if I'm wrong, citric acid occurs naturally in citrus fruits, is an ingredient in many foods (to add tartness), and is used as a preservative, including home-canning.

But having read the responses to the above link, I've decided to use lemon juice instead, even though that has sulfites and a shorter shelf life.
